Paubrasil is named for Brazil's national tree, the pau brasil, found only in remnants of the Atlantic Coastal Forest, where it provides vital habitat for orchids and other epiphytes. It's a fitting namesake for a coffee that represents the best of a classic Natural-processed Cerrado Mineiro: consistent, seasoned farming that delivers a smooth, balanced cup regardless of shifting environmental conditions.

Paubrasil is transparently certified under the Região Cerrado Mineiro Designation of Origin program. Coffees carrying this designation are grown across 55 municipalities that share a unique identity shaped by climate, soil, terrain, elevation, and generations of producer know-how. Contributing farms belong to one of nine cooperatives or six associations affiliated with the Cerrado Coffee Growers Federation, each having signed a statement of good practice in accordance with Brazilian labor law, with coffee stored in accredited warehouses post-harvest. Every container is fully traceable to its source farm via a QR code linking to an online farm profile compiled before shipping.

What to Expect:
This coffee opens with rich cacao and roasted pecan, balanced by bright orange and a smooth, creamy finish. This new release delivers the classic sweetness and body that define a well-made Cerrado Mineiro Natural.

Brewing Recommendations:
Filter: A clean, approachable cup with pronounced cacao and pecan sweetness that brews well across most filter methods.

Espresso: Rich and syrupy, with roasted nut and orange brightness rounding out a creamy, chocolate-forward finish.

Roasting Schedule:
We roast each Monday and ship retail orders on Tuesday morning. Ordering cut-off each week is 5pm CST each Sunday for the next roast day.
