Inspired by his brother, Arnulfo Caro planted his first coffee trees in 2020 and harvested his inaugural crop in 2022. What began as a leap of faith has quickly grown into a family-run specialty coffee farm, lovingly operated alongside his wife, Martha, and their family.
While Martha leads post-harvest processing and balances life raising their young daughter, Arnulfo, formerly a miner, now devotes himself fully to expanding and refining the farm. His journey has been guided by the mentorship of Santiago’s father, whose experience has helped shape both the quality of the coffee and the vision for the land.
Perched at over 2,100 meters above sea level in Anzá, Antioquia, their farm was carved from untouched mountainside into a thriving coffee landscape. This remarkable altitude creates the slow maturation and bright clarity that give their Chiroso its distinctive sweetness, elegance, and complexity.

What is Chiroso?
Chiroso is a distinctive variety first identified in Antioquia, Colombia, believed to be a natural mutation of Ethiopian landrace varieties. It’s prized for its complexity often showing floral sweetness, fruit-forward character, and a tea-like body. Depending on its growing conditions and processing, Chiroso can express a wide range of flavors from tropical fruit to florals to bright citrus, making it one of Colombia’s most exciting varieties to watch.
Processing
The cherries are fermented whole for four days before being depulped and returned to tanks for an additional eight days of fermentation. This extended, slow process, which is made possible by the farm’s high-altitude climate, coaxes out remarkable natural sweetness and depth, allowing the coffee to develop its signature complexity and silky character.
What to Expect:
From the first sip, this coffee captivates with a creamy marshmallow sweetness layered with maple syrup richness and lifted by a bright mandarin acidity.
Brewing Recommendations:
Filter: This is a very forgiving coffee across multiple brewers. We tend to lean towards clarity for these lighter roasted, high-elevation coffees from Colombia, especially with more delicate varieties like Chiroso.
Roasting Schedule:
We roast each Monday, and ship out retail orders on Tuesday morning. Ordering cut-off each week is 5pm CST each Sunday for the next roast day.
