Their journey began when producer Danilo Flórez shared Chiroso seeds with them, inspiring exploration into differentiated varieties. With guidance from producer and processor Elkin Diosa, they began learning the craft of fermentation and processing.

What is Chiroso?
Chiroso is a distinctive variety first identified in Antioquia, Colombia, believed to be a natural mutation of Ethiopian landrace varieties. It’s prized for its complexity often showing floral sweetness, fruit-forward character, and a tea-like body. Depending on its growing conditions and processing, Chiroso can express a wide range of flavors from tropical fruit to florals to bright citrus, making it one of Colombia’s most exciting varieties to watch.

Processing

This washed Chiroso undergoes a 48-hour cherry fermentation in open tanks before being de-pulped, washed, and dried on sun beds until reaching 12% moisture.

What to Expect:

Expect tasting notes of tangerine, caramel apple, and soft florals on the finish. The mouthfeel is light yet slightly round, adding balance to the overall profile.

Brewing Recommendations:

Filter: We are enjoying this both on a V60 cone brewer as well as our flatbed brewers ranging from the Kalita Wave 185 to the April Brewer depending on if we want more clarity or sweetness in the cup.
